Characteristics
1. Sweetness and taste
The sweetness of 50％～60％FOS is 60% of saccharose, The sweetness of 95％FOS is 30% of saccharose, and it has more refreshing and pure taste, without any bad smell.
2. Low calorie
FOS can’t be decomposed by α-amylase、 invertase and maltase，can’t be used as energy by human body, don’t increase blood glucose. FOS’s calorie is only 6.3KJ/g，which is very suitable for patients with diabetes and obesity.
3. Viscosity
During the temperature of 0℃～70℃，FOS’s viscosity is similar to isomeric sugar，but it will decrease with the increase of temperature.
4. Water activity
FOS’s water activity is slightly higher than saccharose
5. Moisture retention
FOS’s moisture retention is similar to sorbitol and caramel.
